Mangu
Ingredients
- 4 green plantains
- 1/4 cup of olive oil
- 1/4 cup of apple cider vinegar
- 1/4 cup of red onions
- 1/4 cup of butter (optional)
- 1/8 cup of milk (optional)
- Salt to taste
Note: amounts are approximate and can be adjusted to taste. Use ripe plantains for a sweeter mangu.
Preparation:
- Peel the plantains.
- Boil the plantains in salted water until they are soft.
- Drain the plantains and mash them with a fork or potato masher.
- Add the butter, milk, and salt to the plantains and mix well.
- In a separate pan, heat the olive oil and vinegar.
- Add the onions to the pan and sautee until they are soft.
- Pour the olive oil and vinegar mixture over the mashed plantains with each serving.
Note: you can also cook eggs in the pan with the onions and serve them with the mangu.
