Mangu

Mangu

Ingredients

  • 4 green plantains
  • 1/4 cup of olive oil
  • 1/4 cup of apple cider vinegar
  • 1/4 cup of red onions
  • 1/4 cup of butter (optional)
  • 1/8 cup of milk (optional)
  • Salt to taste Note: amounts are approximate and can be adjusted to taste. Use ripe plantains for a sweeter mangu.

Preparation:

  1. Peel the plantains.
  2. Boil the plantains in salted water until they are soft.
  3. Drain the plantains and mash them with a fork or potato masher.
  4. Add the butter, milk, and salt to the plantains and mix well.
  5. In a separate pan, heat the olive oil and vinegar.
  6. Add the onions to the pan and sautee until they are soft.
  7. Pour the olive oil and vinegar mixture over the mashed plantains with each serving. Note: you can also cook eggs in the pan with the onions and serve them with the mangu.
