Abuela's Mashed Potatoes

Ingredients

  • 6 Yukon Gold Potatoes
  • 4 Hard Boiled Eggs
  • 1/4 Cup Spanish Olives
  • 1/2 Cup Mayonaise
  • 1/4 Cup Olive oil
  • A few red pepper slices
  • Garlic Powder to taste
  • Paprika to taste
  • Onion Powder to taste
  • Salt to taste

Preparation:

  1. Cut the potatoes into medium sized chunks. Boil the potatoes until soft. In parallel, hard boil the eggs.

  2. Mash the potatoes and eggs until texture is smooth.

  3. Add mayonaise, olive oil, olives, and spices, tasting frequently and adjusting to taste.

  4. Serve with red peppers on top.
